The story
A Noma pedigree,
poured over fire.
Chef Tarek Alameddine came back from Noma with an obsession: take the most familiar thing on any menu and refuse to make it ordinary. BUCO opened in December 2023 on Gouraud Street — a syllabic collision of burgers and cocktails, served in a room of stone, brass and low light.
Beef is dry-aged in-house. Buns are baked daily. Cocktails are built to stand up to fat and smoke, not to decorate the table. The interiors carry a lightly worn architectural hand credited to Karl Karam.
